Sweet Potato Turkey Chili

This hearty, healthy, and easy crockpot recipe will have everyone going back for seconds! Great for a chilly fall evening or a rainy day, this sweet potato turkey chili is likely to become a weeknight dinner staple.

- 1 ¼ lb cooked ground turkey meat I use 85% lean
- 3 cubed small sweet potatoes or 2 medium sized
- 1 14 oz can tomato sauce
- 1 10 oz can diced tomatoes with green chilies
- 10 oz water
- 3 green onions chopped
- 2 celery stalks chopped
- 1 small shallot diced
- 2 chicken bouillon cubes
- 1 tbsp minced garlic
- 1 ½ tbsp chili seasoning I use a homemade blend of garlic powder, onion powder, cayenne, chili powder, cumin, salt, and pepper
- 1 tbsp Cholula Hot Sauce
- salt and pepper to taste
Toppings
- reserved chopped green onions
- shredded cheese
- sour cream
Start with your produce. Peel and cube the sweet potatoes. Chop the celery, shallot, and green onions. Add everything to the crockpot. Reserve green onion ends for topping.
Add tomato sauce, diced tomatoes, and bouillon cubes to the crockpot.
Meanwhile, sauté the ground turkey. Set a skillet on medium high heat and prep with 1 tbsp of olive or avocado oil. Add in 1 tbsp of minced garlic and cook for one minute. Add the ground turkey. Break up the meat and stir occasionally until fully cooked.
Once meat is fully cooked, add to the crockpot and mix everything to combine.
Add 10 oz of water, chili seasoning, salt, pepper, and Cholula.
Set Crockpot to high for 4 hours or low for 6 hours.
Ladle chili into bowls and top with desired toppings!
